In China, what the West calls black tea is called red tea (红茶, hong cha), named for the reddish color in the cup. It’s fully oxidized, which gives it a sweet, smooth, easygoing flavor that’s lovely in the morning. In China, “black tea” (黑茶) means something else: the dark teas, like pu’er.
