This is a 2004 Yunnan Chi Tse Beeng Cha Raw Pu’er.

“Chi Tse Beeng Cha” basically means Seven Cakes of Yunnan. It comes from the old tradition of packing seven Pu’er cakes together.

And this is the kind of tea I love because it’s not supposed to stay the same.

Pu’er changes as it ages.

A young raw Pu’er can be bitter, floral, sharp and astringent. But give it 10, 20, even 30 years and those flavors start transforming. It can become smoother, sweeter, deeper, woody, fruity, earthy and sometimes you’ll taste a bunch of those things in the same session.

That’s why people in China collect old Pu’er almost like wine.

This tea comes from Yunnan, where Pu’er has been made from large-leaf tea trees for generations. Some of these trees develop incredibly deep root systems, and you can really taste that complexity in the tea.

For me, that’s the magic of aged Pu’er.

You’re not just drinking tea.

You’re drinking something that has been slowly changing for more than 20 years.

And every time you steep it, another part of that story comes out.
